Su Nuraxi at Barumini is a Bronze Age palace of stone. The sheep still walk the same ridges. The cooperative takes morning milk, sets it with traditional rennet, and ages wheels until the rind reads the season: young and sweet, or hard enough to grate over fregola. Fiore Sardo — smoked, pastoral, protected — is the older brother.
