Corbezzolo — the strawberry tree — flowers when the rest of the island has gone quiet. Bees work a scarce nectar on the limestone of Oliena, and the honey that follows is famous for refusing to be sweet. First a floral note, then a clean bitterness, like walnut skin and smoke. A few hundred kilos in a good year. In a poor one, almost none.
